Must-try recipes for your Oscar party!

There is still time to organize a viewing party for the Academy Awards this Sunday. Here are two of my favorite go-to recipes when I entertain: Smoked Salmon Pizza and Taco Cupcakes.

As for libations, bubbly is a fun way to celebrate the glamorous night. Or opt for Sangria and pick up some frozen fruit to be used as “ice”.

                                          Smoked Salmon Pizza

This is a lady killer! One bite and you’re hooked.

What you need:
1 Pizza Crust – ready made Boboli is best
Whipped Cream Cheese and/or a spreadable dilled goat cheese
7-10 oz Smoked Salmon pieces
Small Red Onion, diced
Dill (fresh or dried)

Bake crust according to package directions. In a small bowl, mix cheeses and onions. Spread mixture onto cooled pizza crust. Be sure to evenly distribute the onion and spread end to end. Cover cream cheese with smoked salmon pieces. Sprinkle with dill.

You can cut the pizza traditionally into slices; however, it may be easier to distribute when cut into bite-sized pieces.

Taco cupcakes

Not everyone eats seafood, so these snacks are just the ticket for your party.

What you need:
36 Won-ton wrappers
1 pound of ground beef (or chicken)
⅔ cup water
Package of taco seasoning
Pinto Beans
Your favorite salsa
Shredded cheddar cheese
Sour cream

Brown ground beef and drain excess fat. Add taco seasoning and water until well blended.  Saute until almost all the water is absorbed. Meanwhile, spray your cupcake tins with non-stick spray and fill each with a won-ton wrapper.

Add beans to ground beef mixture and fill your tins. Add salsa to each cup and distribute an even amount of cheese. Bake at 375° for 15 mins or until the won-tons begin to brown and get bubbly.

Before serving, top with a dollop of sour cream!
