‘Tis the season for wedding planning!
And that includes one of my favorite parts of the nuptial celebration, the wedding cake! It’s important to plan ahead with ordering your wedding cake. If you’re ordering from a local bakery, chances are the summer dates will book up at least six months in advance. You must remember that the months of June, July and August are the most popular and the dates lock in fast. However, with the fall’s mild weather, October is quickly becoming the new June.
Flavor should be what you want. If you love strawberry and chocolate, make it happen! Chocoholic? Add a layer of chocolate ganache between filling layers. It’s your wedding, don’t worry about what other people will want. However, think twice if you want whipped cream or cream cheese frosting if you’re having an outdoor summer wedding.
A very popular design is having piping that matches the embroidery or lace on your gown. This is a wonderful way to incorporate your personal touch on your confection. Scroll work is also beautiful on tiered cakes. Dividing up the layers with different designs and a colored ribbon is also a unique twist.
Or keep it simple with Dotted Swiss and gum paste flowers. Whether or not you get your layers is completely up to you. There are techniques to make buttercream as smooth as fondant to get the same effect. Your price per slice will likely increase at least $1.00 if you cover your cake with fondant.
If you want a more trendy option, my two absolute favorite cakes of the season include either a chevron pattern or ruffles. Both have a clean finish when created with fondant, however, with the right amount of skill, a ruffle cake can be created using buttercream.
